It’s good. Soft, spongey, squishy. Why is it so yellow? you ask. It’s coz I’m trying to include turmeric in my diet. You can’t taste it but the color is so vibrant and pretty!
Spongey Banana Cake
6 bananas (ang ba jio)
190g plain flour
3.75 tsp baking powder
6 eggs (about 55-60g each)
100g sugar
6 Tbsp coconut oil or vege oil or melted butter
1/8 tsp turmeric powder
1/8 tsp salt
sunflower seeds, nuts optional
Whisk eggs and sugar together until ribbon stage. Then incorporate the rest of the ingredients 1/3 at a time.
Bake in a lined 8” square pan at about 170c for about 45 min or until skewer comes out clean when tested in the middle.
